Sam Thompson was the first person to run 51 marathons in 50 states in 50 days. He was building homes in Biloxi, MS after Katrina and figured a ridiculous stunt could raise some much needed money. He ran the Appalachian Trail one summer. He's run the Wonderland Trail (93 miles and 22,000 feet of total gain) around Mt. Rainier a few times. Once he biked to Rainier from Seattle (100+mi) then climbed Rainier (14,416') then ran the Wonderland, all in a three-day weekend.
When Sam started a food truck selling homemade biscuit sandwiches in Seattle, he committed to sourcing all local ingredients. So local that he could jog to their sources. It was not always pretty, but Sam made it to Pure Country Pork where the Klingeman family raises pigs the right way. They introduced Sam to the pigs and fed him pork chops.
